French Toast Cupcakes

Ingredients:

  • 1/3 cup dark brown sugar

  • 1/4 cup maple syrup

  • 1 tsp cinnamon

  • 1/4 cup butter (1/2 stick)

  • 1/3 cup white sugar

  • 1 1/2 tsp vanilla extract

  • 2/3 cup milk

  • 1/2 cup yogurt

  • 1 1/4 cup flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 180°C, line a cupcake pan with liners.

  2. In a small bowl, combine the brown sugar, cinnamon and maple syrup and set aside.

  3. In a large bowl, beat the butter and white sugar until light and fluffy. Mix in the vanilla, milk and yogurt.

  4. Sift the dry ingredients into the wet ingredients and mix together.

  5. Fill the cupcake liners 2/3 way. Place 1 tsp of the maple syrup mixture on top of the cupcake batter. Using a toothpick swirl the top of the batter.

  6. Bake the cupcakes for 18 minutes or until a toothpick inserted in comes out clean.

  • for extra sweetness eat with some more maple syrup.
