Sticky Date Bread Pudding
Ingredients:
1 loaf of white bread
1 cup pitted dates, roughly chopped
4 eggs
2 1/2 cups milk
1/3 cup brown sugar
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
DATE SAUCE
1/2 stick (1/4 cup) butter
1 cup brown suga
1/2 cup thick cream (قيمر)
1/4 cup pitted dates, roughly chopped
1/4 cup boiling water
Instructions:
Preheat oven to 170°C, grease a casserole pan with butter or vegetable oil.
Cut each slice of bread in half then arrange them in the casserole pan. Spread the chopped dates on and in between the slices of bread.
In a large bowl, combine the eggs, milk, brown sugar, vanilla, cinnamon and salt. Pour the egg mixture all over the bread.
Bake for 25-30 minutes.
While the bread pudding is in oven, make the date sauce. In a medium saucepan on low heat, melt the butter. Then add the brown sugar and mix through.
In a small bowl add the hot water and chopped dates and let soften for 5 minutes. Add the thick cream to the date sauce and mix. Then mix in the chopped dates and hot water.
Pulse the sauce to form a smooth consistency. Pour 1/3 of the sauce onto the bread pudding and use the rest for serving.
serve warm
