Spicy Salmon Poke Bowl

Ingredients:

  • 1/2 cup sushi rice

  • 2 tsp sushi/white rice vinegar

  • 200g boneless salmon

  • 1/4 cup mayonnaise

  • 1 1/2 tbsp sriracha

  • 1 tsp soya sauce

  • 1 garlic clove, crushed

  • 1/2 tsp paprika

  • 1 ripe medium avocado

  • 1 tsp sesame seeds

  • 1/2 small chili

Instructions:

  1. In a medium pot, on medium high heat, cook the rice according to package instructions. Drain remaining water then add the cooked rice back into the pot. Add the rice vinegar and mix.

  2. In a small bowl, combine the mayonnaise, sriracha, soya sauce, garlic and paprika.

  3. Dice the salmon into small cubes and toss into the bowl with the sauce and mix until properly coated.

  4. Slice the avocado into thin slices and set aside.

  5. In a serving bowl, add the sushi rice and top with spicy salmon. Lay the sliced avocados on top of the rice and garnish with sesame seeds. Cut the chili into thin slices and add on top of the salmon.
