Creamy Tuscan Chicken Pasta

Ingredients:

  • 1 chicken breast

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 2 tbsp olive oil

  • 1/4 cup onion, diced

  • 2 garlic cloves, crushed

  • 1 tbsp tomato paste

  • 1 cup single cream

  • 2 cups spinach

  • 2 cups cooked pasta

  • Parsley, for garnish

Instructions:

  1. Cut the chicken breast into fillet pieces and season with salt, pepper, paprika, garlic and onion powder.

  2. In a medium pan on medium heat, add the olive oil and cook the chicken for 5-6 minutes on each side. Once cooked, set aside.

  3. In the same pan, add the onion and garlic and saute for 3 minutes or until aromatic. Add the tomatoes, tomato paste, and cream and let simmer for 5 minutes.

  4. Add the spinach and cooked pasta to the pan and let simmer for another 5 minutes. Garnish with chopped parsley.
