Creamy Tuscan Chicken Pasta
Ingredients:
1 chicken breast
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp olive oil
1/4 cup onion, diced
2 garlic cloves, crushed
1 tbsp tomato paste
1 cup single cream
2 cups spinach
2 cups cooked pasta
Parsley, for garnish
Instructions:
Cut the chicken breast into fillet pieces and season with salt, pepper, paprika, garlic and onion powder.
In a medium pan on medium heat, add the olive oil and cook the chicken for 5-6 minutes on each side. Once cooked, set aside.
In the same pan, add the onion and garlic and saute for 3 minutes or until aromatic. Add the tomatoes, tomato paste, and cream and let simmer for 5 minutes.
Add the spinach and cooked pasta to the pan and let simmer for another 5 minutes. Garnish with chopped parsley.
