Moroccan Rice Bowl

Ingredients:

  • 1/2 cup basmati rice, washed

  • 1/4 tsp saffron threads

  • 1 tbsp unsalted butter

  • 250g minced meat

  • 1 medium onion, grated

  • 2 garlic cloves, crushed

  • 1 tbsp olive oil

  • 1 tbsp lemon/lime juice

  • 2 tbsp parsley, chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/4 tsp garlic powder

  • 1/4 tsp turmeric

Instructions:

  1. In a medium pot, on medium high heat, add the washed rice, saffron threads and water. Cook for 12 minutes or according to package instructions. Strain the rice and set aside.

  2. In a bowl, combine the minced meat, olive oil, lemon/lime juice, parsley and spices and mix until combined.

  3. In a medium pan, on medium high heat, melt the butter. Add the meat mixture to the pan and cook until browned, 8-10 minutes. Drain any excess liquid and set aside.

  4. In a serving plate, add the cooked rice and meat. Top with yogurt, salad, tomatoes or any toppings of your choice. Garnish with some parsley.
