Moroccan Rice Bowl
Ingredients:
1/2 cup basmati rice, washed
1/4 tsp saffron threads
1 tbsp unsalted butter
250g minced meat
1 medium onion, grated
2 garlic cloves, crushed
1 tbsp olive oil
1 tbsp lemon/lime juice
2 tbsp parsley, chopped
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp cumin
1/4 tsp garlic powder
1/4 tsp turmeric
Instructions:
In a medium pot, on medium high heat, add the washed rice, saffron threads and water. Cook for 12 minutes or according to package instructions. Strain the rice and set aside.
In a bowl, combine the minced meat, olive oil, lemon/lime juice, parsley and spices and mix until combined.
In a medium pan, on medium high heat, melt the butter. Add the meat mixture to the pan and cook until browned, 8-10 minutes. Drain any excess liquid and set aside.
In a serving plate, add the cooked rice and meat. Top with yogurt, salad, tomatoes or any toppings of your choice. Garnish with some parsley.
