Rocca Salad

Ingredients:

  • 4 cups fresh arugula/rocca

  • 1 cup strawberries, sliced

  • 1/3 cup walnuts, chopped

  • 1/3 cup sunflower seeds

  • 1/3 cup goat, feta or gouda cheese

  • 3/4 cup olive oil

  • 2 tbsp balsamic vinegar

  • 2 tbsp lemon juice

  • 1/4 tsp paprika

  • 1/4 tsp garlic powder

  • 1/2 tsp black pepper

Instructions:

  1. In a large bowl place all your arugula, if your leaves are too large you can cut them up.

  2. Top the salad with the strawberries, walnuts, sunflower seeds and cheese.

  3. For the balsamic vinaigrette, combine the olive oil, balsamic vinegar, lemon juice, paprika, garlic powder and black pepper.
