Pretzel Nuggets

Ingredients:

  • 2 1/2 tsp yeast

  • 2 tbsp sugar

  • 1 tsp salt

  • 1 1/2 cup warm water

  • 4 cups flour

  • 1/4 cup baking soda

  • 2 cups warm water

  • salt for garnish

  • 1/3 stick butter, melted

Instructions:

  1. In a large bowl, dissolve the yeast, sugar and salt in the 1 1/2 cups of warm water. Leave it for 5 minutes.

  2. Using a spatula, combine 2 cups of flour with the yeast mixture. Add 1 cup of flour and mix again. Add 1/2 cup of flour and start mixing with your hands. Add another 1/2 cup of flour, knead dough until smooth and elastic.

  3. Let the dough rest in a well oiled bowl for 1 hour.

  4. Preheat the oven to 220 °C. Line a baking tray with parchment/wax paper.

  5. Flour your work surface then drop the dough on top. Sprinkle some flour on top, cut the dough into 12 even sections.

  6. Roll out each section into a rope. Cut into 1-2 inch pieces.

  7. In a small bowl, dissolve the baking soda in the 2 cups of water. Soak each nugget in the baking soda water for 15-20 seconds.

  8. Arrange the nuggets onto the tray and sprinkle them with salt. Bake for 7-8 minutes.

  9. Once out of the oven brush the melted butter onto the nuggets.
