Pretzel Nuggets
Ingredients:
2 1/2 tsp yeast
2 tbsp sugar
1 tsp salt
1 1/2 cup warm water
4 cups flour
1/4 cup baking soda
2 cups warm water
salt for garnish
1/3 stick butter, melted
Instructions:
In a large bowl, dissolve the yeast, sugar and salt in the 1 1/2 cups of warm water. Leave it for 5 minutes.
Using a spatula, combine 2 cups of flour with the yeast mixture. Add 1 cup of flour and mix again. Add 1/2 cup of flour and start mixing with your hands. Add another 1/2 cup of flour, knead dough until smooth and elastic.
Let the dough rest in a well oiled bowl for 1 hour.
Preheat the oven to 220 °C. Line a baking tray with parchment/wax paper.
Flour your work surface then drop the dough on top. Sprinkle some flour on top, cut the dough into 12 even sections.
Roll out each section into a rope. Cut into 1-2 inch pieces.
In a small bowl, dissolve the baking soda in the 2 cups of water. Soak each nugget in the baking soda water for 15-20 seconds.
Arrange the nuggets onto the tray and sprinkle them with salt. Bake for 7-8 minutes.
Once out of the oven brush the melted butter onto the nuggets.
