Truffle Mushroom Eggs
Ingredients:
1 tbsp truffle oil (or butter)
1/2 cup sliced mushrooms
1 clove garlic, crushed
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 cup single cream
1 tsp parsley, chopped
2 slices sourdough, toasted
2 eggs
Instructions:
In a medium pan, on medium-high heat, add the truffle oil (or butter) and allow it to heat up.
Add the sliced mushrooms, garlic, salt, black pepper and paprika and let the mushrooms cook for 4-5 minutes.
Add the single cream and let the mushrooms simmer for 3-4 minutes until the cream goes a light brown colour.
Cook the eggs to your liking and season.
Place the creamy mushroom mixture onto the toasted sourdough and the eggs on top.
Garnish with parsley and extra seasoning if needed.
