Low Calorie Lemon Bars

Ingredients:

  • 1 cup flour, divided

  • 1/4 cup cornflour

  • 1/8 tsp baking powder

  • 1/8 tsp salt

  • 2 large eggs

  • 1 large egg white

  • 1 tsp water

  • 2 tbsp butter, softened

  • 1 cup sugar, divided

  • zest from one large lemon

  • 1/2 cup lemon juice (about 4 lemons)

  • 1 tbsp icing sugar

Instructions:

  1. Preheat oven to 175 °C. Line a square tin with foil extending over the edges, oil the foil.

  2. For the crust, whisk together 2/3 flour, cornflour, baking powder and salt.

  3. In a small bowl, mix together the the eggs and egg white. Take 1 tbsp of the egg mixture and mix it with the 1 tsp water. Set both egg mixtures aside.

  4. Beat the butter on low speed with an electric mixer until creamy. Add 1/4 cup of the granulated sugar and beat until blended. Beat in the egg-water mixture and the flour until well combined. (it will be crumbly)

  5. Press the dough mixture evenly onto the bottom of the pan. Bake for 22 minutes.

  6. For the filling, whisk together the remaining flour and sugar. Whisk in the remaining egg mixture. Add the lemon zest and lemon juice and mix.

  7. Remove the crust from the oven. Reduce the oven temperature to 150 °C. Pour the lemon mixture over the hot crust. Bake until the filling is set, 20 to 25 minutes.

  8. Remove from the oven and place on a wire rack to cool. Refrigerate until cold, 1-8 hours.

  9. To serve, sprinkle the cold bars with confectioners' sugar. Use the foil to lift the slab of bars from the pan. Cut into 16 even squares.
