Chicken Teriyaki Fried Rice
Ingredients:
450g chicken breast, boneless
1 1/4 cup teriyaki sauce
1/4 cup olive oil
1 medium onion, chopped
4 garlic cloves, crushed
1 cup chopped or shredded carrots
1 cup broccoli, slightly chopped
3 eggs, beaten
5 cups brown rice, cooked
3 tbsp soya sauce
1 tbsp sesame oil
1 tsp black pepper
Instructions:
Start by cutting the chicken breast into 1/2-1 inch cubes. Place in a bowl and mix with teriyaki sauce. Cover and refrigerate, allow the chicken to marinate for at least one hour.
In a wok or deep pan, add the marinated cubes chicken and cook over high heat thoroughly. Set aside.
In the same pan, add the oil and cook the onions, garlic and carrots until onions are translucent. Add the broccoli and cook for 3-5 more minutes.
Push the vegetables to one side of the pan, add the eggs to the empty half of the pan and scramble the eggs. Once scrambled mix all the vegetables together.
Add the rice, cooked chicken, soya sauce, sesame oil and black pepper. Mix well and let the rice cook until fried and crispy.
