Chicken and Veggie Stir Fry
Ingredients:
500g boneless chicken breast
5 tbsp vegetable oil
1 tsp salt
1 tsp black pepper
2 cups broccoli
1 cup mushrooms, chopped
SAUCE
4 garlic cloves, crushed
1 tbsp ginger, minced
1 tbsp sesame oil
1/4 cup soy sauce
2 tbsp brown sugar
1/4 cup flour
Instructions:
In a large pan over medium heat, add 2 tbsp of vegetable oil. Add the chicken with the salt and pepper and sauté until cooked through and slightly browned. Remove the chicken from the pan and set aside.
Add 2 tbsp of oil to the pan along with the mushrooms. When the mushrooms start to soften add the broccoli and stir fry until broccoli is tender. Remove broccoli and mushrooms form the pan and set aside.
Add 1 tbsp of oil to the pan along with the garlic and ginger. Sauté until fragrant. Add the rest of the sauce ingredients and mix until smooth.
Return the chicken and vegetables back to the pan and stir to coat in sauce.
