Grape Leave Fatah
Ingredients:
2 cups short grained rice
2 cups onion, chopped
2 medium tomatoes, chopped
2/3 cup parsley, chopped
2/3 cup coriander, chopped
10 grape leaves, chopped
1/2 cup olive oil
1/2 cup lemon juice
2 tbsp pomegranate molasses
white sauce (next)
1/4 cup chickpeas (topping)
fried bread (topping)
parsley for garnish (optional)
WHITE SAUCE
2 cups yogurt
1/2 cup tahina (هردة)
1/2 cup water
1/3 cup lemon juice
1 clove garlic, crushed
1 tsp salt
1 tsp paprika (optional)
Instructions:
In a pan, fry the onions in olive oil until translucent.
Add the tomatoes and stir.
Then add parsley, coriander and grape leaves and mix over heat.
Cook the rice until half done. (Around 10 minutes)
Strain the rice. Then add the lemon juice and pomegranate molasses.
Add the grape leave mixture to the rice, cover the pot with a lid and cook for 15 minutes. (if the mixture seems dry add some olive oil and water)
In your serving dish, place a thick layer of the rice, top with the sauce, chickpeas and fried bread.
For the white sauce, mix all the ingredients together except the water.
Add water 1 tbsp at a time until desired consistency is reached (not runny but not too thick)
