Chicken Fajita Pasta

Ingredients:

  • 3 tbsp olive oil

  • 3 chicken breast, sliced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 onion, sliced

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tbsp chili powder

  • 1 tbsp cumin

  • 1 tbsp garlic powder

  • 5 cups milk

  • 4 cups penne pasta

  • 1 cup shredded cheese (mozzarella/shredded/cheddar)

Instructions:

  1. Heat oil in a large pot over high heat.

  2. Chop each chicken breast into small sections. Add the chicken and cook for 5-6 minutes then take it out.

  3. Add in the peppers and onion and sauté until the onions are translucent, about 6 minutes.

  4. Add the chicken back into the pot and stir with the spices until evenly coated.

  5. Add the milk and the penne, stirring constantly to avoid any of the pasta sticking together.

  6. Cook for about 20 minutes until the pasta is fully cooked and the milk has reduced into a thick sauce.

  7. Add in the cheese and mix until melted.
